An Evening for All the Senses

What would Valais be without raclette and wine? On this evening, you’ll discover the culinary diversity of Valais in a particularly delightful way: with four select Raclette du Valais AOP raw-milk cheeses from various alpine pastures and cheese dairies, sliced directly from the wheel and paired with select Valais wines.

To kick things off, the Raclette Strikers, together with the host, will give a brief introduction to the world of Raclette du Valais AOP. They’ll present the four selected cheeses, their origins, and the respective alpine pastures and cheese dairies, and explain how production and aging shape the flavor and character of each cheese.

Then it’s up to you: Enjoy a serving of your personal favorite, or embark on the complete “Tour de Raclette du Valais AOP” featuring four different varieties. This way, you can directly discover and compare the subtle differences between the various cheeses.

This culinary journey is accompanied by select Valais wines from three young female winemakers who blend family tradition with modern oenology, natural viticulture, and the diversity of the Alpine Terroir

z’Hansrüedi—a singer-songwriter, entertainer, cultural award winner, and true Valais native—brings that authentic Valais atmosphere to the event. With his music and his distinctive style, he sets the tone for the evening and brings a piece of Valais right into the heart of the action.

On November 5, winemaker Sandrine Caloz will be a guest at the chalet. She represents a young, innovative generation of Valais winemakers. Named “Organic Winemaker of the Year” and honored by Gault Millau as “Rookie of the Year,” she combines traditional grape varieties with modern ideas and a keen sense of the terroir.
